Dried Fruit, seeds & Peanut Butter Sourdough by Elaine Boddy
Method
Mix it all up well, spoon the mixture into a prepared Pullman load pan or standard 2lb loaf pan, adding teaspoons of peanut butter in between the spoonful's of the mixed up ingredients.
Bake uncovered at 350F (180c) for convection or 400F (200c) for conventional for 50-60 mins from a cold or hot start or until a metal skewer or thin knife inserted into the centre comes out clean. Turn it out from the pan and cool. Slice and enjoy!
Ingredients
Makes 1 loaf
- For the loaf:
- 100g starter fed, unfed or discard
- 350g water
- 400g plain flour
- 150g dried apricots, cut in half
- 50g dried cranberries
- 50g raisins
- 50g roasted pumpkin seeds
- 150g ManiLife Original Crunchy Peanut Butter
- 2 eggs
- 1 tsp baking soda
- 1.2 tsp baking powder
- For later:
- 100g more peanut butter
- Optional:
- 2 tsp mixed spice/spices of your choice
