Method
Start by dicing the sweet potato into bite sized pieces, pop on a baking tray with a good drizzle of olive oil, the chives, salt and pepper and place in a preheated oven at 200ºC for around 15 minutes
Once the sweet potato has slightly cooked, add on the butterbeans, tender stem and tomatoes, stir together to ensure everything is coated in the olive oil and salt and continue to bake for around 25 minutes (or until golden)
Prepare the dressing by mixing all of the ingredients together, taste test adding a little more of each ingredient if needed
Drizzle over once baked and enjoy! Can be served with flavoured rice or a salad.
Ingredients
- 1 large sweet potato cut into cubes
- 180g pack of Tenderstem
- 80g tomatoes
- 100g jarred butter beans
- Salt
- Pepper
- 1 tbsp dried chives
Dressing
- 2 tbsp Manilife Almond Butter
- 1/2 lime juiced
- 1/2 tsp white wine vinegar
- 1 tsp dried or fresh chives
- 1 tbsp hot honey or agave]
