Thai Crunchy Salad

Method
Start by using a fine julienne peeler to slice the cucumber, red cabbage, red pepper and carrots into a large mixing bowl, then finely slice the remaining salad ingredients and toss together (save a few sprinkles of chopped chives and coriander to garnish at the very end).
To make the dressing simply whisk all of the ingredients together in a mixing bowl until combined, you may want to add a little more water until you get a runny consistency.
Pour the dressing over the salad and toss until it's all coated. Enjoy!
Ingredients
- For the salad:
- 2 carrots
- 1 cucumber
- 3 spring onions
- 1/4 red cabbage
- 1 red pepper
- 100g sugar snap peas
- 10g chives
- 10g coriander
- pinch of salt
- For the dressing:
- 2 tbsp ManiLife Deep Roast Crunchy Peanut Butter
- 1/2 lime, squeezed
- 1 tbsp tamari or soy sauce
- 1 tsp mirin
- 2 tbsp agave / hot honey
- 3-4 tbsp water (until you get a runny consistency)
