Tempeh Skewers with Peanut Sauce

Method
Preheat the oven to 180C (350F).
Cut the tempeh into small cubes and place in a bowl. Add 2 tbsp of soy sauce, 1 tsp paprika powder, and a drizzle of olive oil. Stir until all the pieces are coated and let it marinate for at least 15 minutes.
Thread the marinated tempeh onto skewers and place them on a baking tray. Bake in the oven for 20-30 minutes, until golden and crispy.
While the tempeh is cooking, add all the peanut sauce ingredients to a saucepan. Stir over low to medium heat until the sauce thickens, about 5-7 minutes.
Once the tempeh skewers are done baking, remove them from the oven and coat them generously with the peanut sauce.
Enjoy your tempeh skewers served with steamed rice and veggies, or a fresh salad.

- Tempeh:
- 300 grams tempeh
- 2 tbsp soy sauce
- 1 tsp paprika powder
- 2 tbsp olive oil
- Peanut Sauce:
- 1/3 cup ManiLife Original Roast Crunchy Peanut Butter
- 1/3 cup coconut milk
- 2 tbsp soy sauce
- 1/2 lime, juice
- 1 tbsp maple syrup
- 1 tsp chilli paste
- 1 tsp fresh ginger, grated
- 1 clove garlic, minced
