Miso Camamelised Onions, Avo, Apples & PB Sandwich

Method
In a frying pan over medium heat, add the olive oil, sliced onion, and miso paste. Cook, stirring occasionally, until caramelised, about 45 mins. Add a splash of water if the onions begin to dry out.
Toast the bread to your preference (optional).
Assemble the sandwich: spread the peanut butter on one slice of bread, then layer with caramelised onions, apple slices, avocado, and microgreens.
Top with the second slice of bread, press gently, and serve straight away.
Ingredients
- 2 slices of fresh sourdough bread
- 2 tbsp ManiLife Original Roast Smooth Peanut Butter
- 1 yellow onion, thinly sliced
- 1 tbsp white miso paste
- 1 tbsp olive oil
- 1 pink lady apple, thinly sliced
- 1/2 avocado, thinly sliced
- Small handful of microgreens
