Peanut Cauliflower Stew

Method
Start by adding the chopped onion and garlic to a pot with a glug of olive oil and fry on a low heat for around 5 minutes
Add in the chopped potato, cauliflower and spices and fry for a further 5 minutes before adding the tin of chopped tomatoes. Fill the tin with water and add this to the pot and stir together
You want enough stock to cover the potatoes and cauliflower so you may need to add another tin full of water to the mix, add in that delicious Manilife then bring to a simmer for around 18 minutes
Taste test adding lots of seasoning, then once the potatoes are softened, turn the heat right down and add in the plant based crème fraiche
One creamy and delicious serve up with chilli flakes, more salt and pepper and a few fresh herbs
Ingredients
- 1 red onion or 2 shallots, finely chopped
- 1 large clove garlic
- 2 large baking potatoes, diced into bite size pieces
- 1 small head of cauliflower cut into florettes
- 1 red pepper
- 400g tinned tomatoes
- 2 heaped tbsp Manilifep Roast Crunchy
- 200ml plant based soured cream / creme fraiche
Spices:
- 1 tsp smoked paprika (sweet)
- 1/2 tsp cumin powder
- 1/2 tsp turmeric
- Salt and pepper to season throughout
- Sprinkle chili flakes
