Paneer Peanut Butter Sandwich

Method
Marinate the Paneer. Cut the paneer into slices. In a bowl, mix all the marinade ingredients together. Coat the paneer slices in the marinade and leave for at least 15-30 minutes while you prep the other ingredients.
Cook the Paneer. Heat some oil in a pan over medium heat. Fry the marinated paneer slices for a few minutes on each side until golden brown and crispy.
Assemble the Sandwich. Toast the sourdough slices. Spread tamarind paste on one slice, followed by a layer of ManiLife Peanut Butter. Add the fried paneer, then layer on the cucumber slices, pickled carrots, crispy onions and fresh coriander. Spread mango chutney on the other slice of bread and place it on top. Press down slightly, slice in half and enjoy.

- For the sandwich:
- Good sourdough
- ManiLife Deep Roast Crunchy Peanut Butter
- Tamarind Paste
- Marinated fried paneer
- Cucumber
- Pickled carrots
- Fresh coriander
- Crispy onions
- Mango chutney
- For the paneer marinade:
- 250g paneer
- 1 tbsp Greek yoghurt
- 1/2 tsp chilli powder
- 1/4 tsp tumeric
- 1 tsp garam masala
- 1/2 tsp coriander powder
- 1/2 tsp cumin
- 1/4 tsp black pepper
- 1/2 tsp chaat masala (if you skip this out, add more salt!)
- 1/2 tsp garlic powder
- 1/4 tsp ginger powder
- salt to taste
