Elaine's Vegetarian Cocoa Peanut Butter Chilli

Method
Sauté the onions in a large pan over a medium heat until softened
Add the crushed garlic and cook briefly, then add the spices and cook for a few seconds (be sure not to burn them), then add the tinned tomatoes and stir well
Add everything else expect the sweet potatoes, stir it all well and cook for 5 mins, stirring well to mix the peanut butter through. Add the sweet potato and cook over a low hear until it's all hot and cooked through. Try not to stir too much so that the sweet potato doesn't break up too much.
Serve with Elaine's Cocoa Peanut Butter and chilli bread. For an additional flavour - add grated cheese, sliced jalapenos and a sprinkle of cocoa dusted peanuts.

- 2 garlic cloves, peeled and crushed
- 1 medium red onion, peeled and chopped
- 1-2 tbs Cajun spice mix (smoked paprika, cumin, oregano, chilli powder)
- 2 tin chopped tomatoes
- 4 blocks frozen chopped spinach
- 1 can red kidney beans, drained
- 2-3 tbsp ManiLife Rich Cocoa Peanut Butter
- 2 medium sweet potatoes, cut into chunks, steamed and roasted
- Optional: ManiLife Cocoa Dusted Peanuts
