Chilli Bean Soup

Method
Heat some oil in a pan over medium heat.
Add onions, garlic and spices. Mix well and cook for 3 minutes until onions have softened.
Then add the pepper, beans, tomato puree and ManiLife Peanut Butter. Mix well for a few minutes.
Then add your stock. Bring to boil, then let it simmer for 10 minutes, whilst you take out about 4-5 ladlefuls of the soup and blend. Return the blended mixture back to soup and taste for seasoning.
Ingredients
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1tsp cumin
- 1tsp chilli flakes
- 1tsp smoked paprika
- 1 red pepper, chopped
- 400g canned mixed beans, drained and rinsed
- 2tbsp tomato puree
- 3tbsp ManiLife Original Roast Smooth Peanut Butter
- 400ml vegetable stock
