Chickpea Burger

Method
Finely chop the red onion, and sauté in some olive oil for around 15 mins until soft. Add the garlic, also finely chopped, in the final 2 mins to cook it with the onion.
In a large bowl, mash the chickpeas (or can use a food processor to blend). Add in the cooked onion/garlic mixture, seasonings, peanut butter, fresh coriander (finely chopped), and breadcrumbs/oat flour. Mix until a stiff consistency forms, then separate into 5-6 patties, and bake at 180C for 25-30 mins.
Serve the burger patty in a seeded bun with your burger sauce of choice, lettuce and tomato.

- 1 tsp paprika
- 1 tbsp nutritional yeast
- 1/2 tsp salt
- 40g ManiLife Deep Roast Crunchy Peanut Butter
- 30g bread crumbs or oat flour
- Handful fresh coriander
- Seeded burger buns
- Large tomato
- Lettuce
- Burger sauce of choice
