Chicken Satay Skewers

Method
Add all the satay ingredients into a bowl and mix, apart from the garlic and ginger. Leave in the fridge to marinate.
Dice the chicken breast up into decent size chunks - enough to put onto a skewer. When all evenly portioned, add oil to a non-stick pan and pop onto a high heat.
Add the chicken to the pan with the ginger and garlic and season. Fry for 8-10 minutes until cooked all the way through. Remove from the heat and cool down a little.
Put the satay sauce into a small bowl on the board (or whatever you are serving the skewers on). Divide the chicken chunks between all the skewers.

- small piece ginger
- 2 garlic cloves
- juice 1 lime
- 1 tsp clear honey
- 1 tbsp mild curry powder
- 3 tbsp ManiLife Deep Smooth Peanut Butter
- 165ml Coconut milk
- 500g Chicken breast fillets
- 1 red chilli
