Almond & Apple Loaf

Method
Grease a loaf tin with butter and line the base with baking paper. Pre heat the oven to 160c.
Beat the butter, golden caster sugar, almond extract, vanilla extract and 1 tablespoon almond butter until smooth and creamy.
In a separate bowl, whisk the eggs and milk together and slowly add to the butter mixture. Sift in the self-raising flour and beat until just combined.
Pour half of the mixture into the prepared tin. Add a layer of half of the thinly sliced apples and 1 tablespoon of drizzled almond butter. Top with the remaining cake mixture and apple slices. Then, sprinkle with the almond flakes.
Bake in the oven for 50 - 60 minutes or until the cake is cooked when tested with a skewer. The skewer should be clean.
Leave to cool in the tin for 10 minutes before placing it on a cooling rack to cool completely. Once cooled, drizzle with the remainder of almond butter and add some flaked almonds for texture.

- 1 tsp Vanilla Extract
- 1 tsp Almond Essence
- 3 tbsp ManiLife Smooth Almond Butter
- 2 Eggs
- 125ml Milk
- 225g Self-raising flour
- 3 apples (cored, peeled & thinly sliced)
- 45g Flaked almonds
