10 Minute Peanut Noodles

Method
Start by mixing the packet seasoning in the instant noodles with the mayo, lime juice and Kirin, then mix together
Pop the noodles in a pot of boiling water and leave to simmer for around 4-5 minutes
Smash then chop the cucumber then add to the bowl with the sauce, add in the chopped coriander followed by the chopped Manilife Deep Salted Peanuts, stir in those noodles
Top with the finely chopped spring onions, chilli flakes and an additional few Salted Peanuts for crunch and enjoy
Ingredients
- 1 pack of instant ramen noodles
- 2 tbsp vegan mayo
- 1/s tsp mirin
- 1/2 lime, squeezed
- 3 tbsp chopped Manilife Deep Salted Peanuts
- 1/2 cucumber
- 2 spring onions, finely chopped
- Handful chopped coriander
- 1/2 tsp chilli flakes
