satay skewers with peanut sauce

Satay Skewers With Peanut Sauce

With summer approaching this recipe is the perfect excuse to get the BBQ fired up! Or the griddle/grill if it’s raining… Another favourite from Slô Street Food!

Makes around 25-30 small skewers.

Satay Skewers:

1kg chicken/beef/lamb, tender cuts, sliced into thin strips

Pinch turmeric powder

1 tsp coriander powder

1 tbsp honey

1 tbsp oyster sauce

2 tbsp chopped garlic

2 tbsp chopped ginger

1 tsp salt

Wooden skewers, soaked in water

Peanut Sauce:

1 red chilli, deseeded

1 tsp chopped garlic

1 tsp chopped ginger

1 small red onion, finely diced

1 tsp shrimp paste (or 1 tbsp fish sauce)

1 tsp brown sugar

3 large tbsp Manílife Deep Roast

1 splash coconut milk or water

Pinch salt

  1. Slice your chosen meat into thin strips and marinade in the rest of the satay ingredients (other than the skewers which you can put on to soak)!
  2. For the peanut sauce chop up the chilli, garlic, ginger, and onion as finely as you can, or blitz in a blender.
  3. Drop the chopped or blitzed ingredients into a pan on medium heat and cook for 2-3 mins.
  4. Throw in the shrimp paste (or fish sauce), sugar, coconut milk and Manílife Deep Roast, and keep on the heat for 10-15 minutes until combined and heated through, keeping an eye on it so it doesn’t burn.
  5. This sauce can be refrigerated or frozen and reheated when you’re ready!
  6. When you’re ready to eat, thread the strips of meat onto the skewers and chuck them on the barbeque (or under the grill or into a griddle pan). You want a high heat to give the outside some char but make sure they’re cooked all the way through!
  7. When your satay skewers are charred to perfection dunk them into your peanut sauce and munch away!
