Peanut Butter Banana Strawberry Quesadillas

Spring is upon us and the strawberry season is about to begin. We can’t wait!

Apart from the fact that strawberries are superfoods packed with powerful anti-oxidants (vitamin C), they also taste delicious and are surprisingly versatile. So let’s make the most of them this year!

For a healthy lunch – simple and quick to make – we suggest these yummy peanut butter, banana and strawberry quesadillas. 



2 wholewheat tortillas

4 tablespoons ManiLife peanut butter

pinch of cinnamon

1 cup fresh strawberries, sliced

1 banana, sliced

  1. Combine the peanut butter and cinnamon in a bowl. Spread the mixture on tortillas. Arrange the strawberries and banana on half of the tortilla.
  2. Fold the top halves of the tortillas over the strawberries. 
  3. Heat a large nonstick pan over medium-low. Add the quesadillas and cook, turning once, until lightly browned and heated through, about 6-8 minutes.
  4. Let it stand for 2 minutes then cut each into thirds.
