Mango and Peanut butter dressing

This dressing will need no introduction, once you have made it once! Enjoy.


1 red chilli

1 inch ginger

2 cloves or garlic

1 ripe mango

Small bunch coriander

2tbsp ManiLife peanut butter

1 cup orange juice


1. Peel the ginger and garlic and mango. Remove the stone from the mango.

2. Roughly tear the coriander and chop the chilli.

3. Place all prepared ingredients into a blender, without the peanut butter. Blend until smooth.

4. Using a fork, whisk in the peanut butter and add the orange juice slowly, whisky continuously, until the desired consistency is reached.
