Method
For the loaf: Preheat oven to 180 degrees and spray a 9x4 loaf pan with baking spray or line it with baking parchment.
Microwave the peanut butter for 45 seconds to soften it, then in a large bowl whisk it together with the mylk, brown sugar and egg until smooth.
Sift together flour, baking powder and salt and add it to the wet ingredients. Whisk the dry and wet ingredients together until just combined then pour the batter into your loaf pan.
Bake for 35 minutes or until a toothpick inserted in the centre comes out clean.
Leave to cool. The loaf can be made in advance and keeps in the fridge very well for a week (if it lasts that long!) It should be moist and light in texture.
For the Pain Perdu: Crack an egg into a bowl, add the cinnamon and whisk together. Then cut a slice of the loaf (chunky is best) and soak it in the egg mixture, turning a few times to make sure it absorbs well.
Heat a small frying pain, add the coconut oil to coat it, place your slice of egg-soaked loaf in the pan for about 1-2 minutes, turn gently and repeat until you have a soft brown toasted colour. Put on a plate to cool a little.
Whisk the oat cream, vanilla extract and icing sugar together until firm peaks form. Top over your egg-coated peanut loaf, drizzle with the ManiLife of your choice and enjoy!
